Lamb Steaks with Greek Salad and Tzatziki

Ingredients

Lamb

  • 1 pack lamb rump steaks

Croutons

  • 1 ficelle bread, cut in half lengthways and thinly sliced

Salad

  • 1 tomato, cut into wedges
  • 1 Lebanese cucumber, cut in half lengthways then thinly sliced
  • 1 lettuce, roughly torn
  • ½ pack olives

To Serve

  • Tzatziki
  • Feta cheese

From the Pantry

  • Oil
  • Salt & Pepper
  • Vinegar

Steps

  1. Cook lamb Heat a drizzle of oil in a medium fry-pan on high heat. Pat lamb dry and season. Cook for 3-4 minutes each side for medium (depending on thickness), or until cooked to your liking. Wrap in foil to rest then slice.
  2. Meanwhile, prep croutons Toss on a lined oven tray with a drizzle of oil and season. Bake for 3-5 minutes, until golden and crispy.
  3. Prep tomato, cucumber & lettuce Toss together in a bowl with olives, cooked croutons and a drizzle of olive oil and vinegar. Season.
  4. Serve, lamb with salad. Drizzle over tzatziki and crumble over feta.
