Ingredients
Lamb
- 1 pack lamb rump steaks
Croutons
- 1 ficelle bread, cut in half lengthways and thinly sliced
Salad
- 1 tomato, cut into wedges
- 1 Lebanese cucumber, cut in half lengthways then thinly sliced
- 1 lettuce, roughly torn
- ½ pack olives
To Serve
- Tzatziki
- Feta cheese
From the Pantry
- Oil
- Salt & Pepper
- Vinegar

Cook lamb Heat a drizzle of oil in a medium fry-pan on high heat. Pat lamb dry and season. Cook for 3-4 minutes each side for medium (depending on thickness), or until cooked to your liking. Wrap in foil to rest then slice.

Meanwhile, prep croutons Toss on a lined oven tray with a drizzle of oil and season. Bake for 3-5 minutes, until golden and crispy.

Prep tomato, cucumber & lettuce Toss together in a bowl with olives, cooked croutons and a drizzle of olive oil and vinegar. Season.

Serve, lamb with salad. Drizzle over tzatziki and crumble over feta.
