Ingredients
Couscous
- 1 pack spiced wholemeal couscous
- ¾ cup boiling water
- 1 capsicum, diced
- 1 tomato, diced
- 1 pack rocket
Beef
- 1 pack Moroccan beef sirloin steaks
To Serve
- Hummus
- Feta
From the Pantry
- Oil
- Salt & Pepper
- Vinegar

Cook couscous In a heat-proof bowl, combine couscous and boiling water. Stir, cover and leave for 5 minutes.

Meanwhile, cook beef Heat a drizzle of oil in a medium fry-pan on medium-high heat. Pat beef dry and season. Cook for 2-4 minutes each side for medium (depending on thickness), or until cooked to your liking. Wrap in foil to rest then slice.

Prep capsicum and tomato Fluff up couscous and add capsicum, tomato and rocket to bowl. Toss to combine, drizzle with a little olive oil and vinegar and season.

Serve couscous with sliced beef. Top with hummus and crumble over feta.
