BBQ Pork Ribs with Potato Salad and Slaw

Ingredients
Potato Salad
- 400g baby potatoes
- 1/2 bunch parsley
- 1 pack gherkins
- 1 Tbsp mustard
Slaw
- 1 baby cabbage
- 1 carrot
- 1 pack ranch dressing
Ribs
- 1 pack marinated pork ribs
- 1 pack chipotle sauce
Steps

Cook potatoes Preheat BBQ grill to medium. Bring a pot of salted water to the boil. Dice potatoes 2cm and cook in pot of boiling water for about 15 minutes, until tender. Drain.

Prep potato salad Roughly chop parsley and gherkins. In a large bowl whisk together 1 Tbsp of vinegar and oil with mustard. Add cooked potatoes, parsley and gherkins and toss to combine. Season to taste.

Make slaw Finely shred baby cabbage until you have about 2 cups. Grate carrot. Toss both in a bowl with ranch dressing and season to taste.

Cook ribs Grill ribs on BBQ for about 4 minutes each side, then baste with a dollop of chipotle sauce and continue cooking for a further 10 minutes, turning every 2 minutes, until meat is glazed and tender. Baste each side twice

Separate ribs Use a thin sharp knife to seperate ribs, with a gentle sawing motion to cut down between the bones.

Serve ribs, slaw and potato salad on plates.
