Shiitake Mushroom Yakisoba

Ingredients
Yakisoba
- 1 brown onion
- 1 pack shiitake mushrooms
- 1 baby bok choy
- 1 Palermo capsicum
- 2 cakes noodles
- 1 pack black beans
- 1 pack yakisoba sauce
- 1 cup edamame beans
To Serve
- 2 spring onions
- 1 pack crispy shallots

- Salt & Peper

Prep veggies Bring a large pot of salted water to the boil. Thinly slice onion, mushrooms, bok choy, capsicum and spring onions.

Cook noodles Cook noodles in pot of boiling water for about 6 minutes, until tender. Drain and set aside.

Cook veggies Heat a drizzle of oil in a non-stick fry-pan on high heat and cook onion and mushrooms with black beans for about 3 minutes, until tender. Add cooked noodles, yakisoba sauce and edamame and cook on low heat for a further 2-3 minutes, until caramelised.

Finish yakisoba Toss bok choy and capsicum through noodles and cook a further 1-2 minutes, until warmed through. Season to taste

Serve yakisoba topped with spring onions and crispy shallots.
