
Char Siu Pork with Asian Vegetables

Ingredients
Rice
- 1 cup jasmine rice
- 1½ cups water
Pork
- 1 pack pork fillet
- 1 pack pork spices
- 1 pack char siu sauce
Asian Veggies
- 1 baby bok choy
- 1 broccoli
- ½ pack crispy shallots
Steps

Cook rice Preheat BBQ grill to medium. Combine rice, water and a pinch of salt in a pot and bring to the boil. Once boiling, cover with a lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and steam, still covered, for 8 more minutes. Do not lift lid during cooking.

Prep pork Pat pork dry and cut into 2cm thick slices. Rub with pork spices, drizzle with oil and season. Cut bok choy into quarters lengthways, keeping leaves together. Cut broccoli into large florets.

Cook pork Cook pork on BBQ grill for 3-4 minutes each side, or until just cooked through. Remove from heat, rub with char siu sauce and rest, covered.

Cook veggies Toss bok choy and broccoli with a drizzle of oil, season and cook on BBQ grill for 4-5 minutes, until just tender. Turn to ensure even cooking. Set aside on a platter, drizzle with vinegar and top with crispy shallots.

Serve rice, veggies and pork drizzled with resting juices.
