Char Sui Pork with Asian Veggies

Ingredients
Rice
- 1½ cups jasmine rice
- 2¼ cups water
Pork
- 1 pack pork fillet
- 1 pack pork spices
- 1 pack char sui sauce
Veggies
- 2 baby bok choy
- 1 broccoli
- 1 pack crispy shallots
Steps

Cook rice Preheat BBQ grill to medium. Combine rice, water and a pinch of salt in a pot and bring to the boil. Once boiling, cover with a lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and steam, still covered, for 8 more minutes. Do not lift lid during cooking.

Prep pork and veggies Pat pork dry and rub with pork spices and a drizzle of oil. Season. Cut bok choy in quarters lengthways, keeping leaves together. Cut broccoli into large florets.

Cook pork Cook pork on BBQ grill for 20-25 minutes, depending on thickness, or until cooked medium. Turning to ensure even cooking. Remove from heat and rub with char sui sauce. Rest, covered.

Cook veggies Toss veggies with oil, season and cook on BBQ grill for about 5 minutes until tender. Turn to ensure even cooking. Set aside on platter, drizzle with vinegar and top with crispy shallots.

To finish Thinly slice pork and toss in any resting juices.

Serve rice, veggies and pork drizzled with resting juices.
