Pumpkin, Bacon & Feta Salad with Pepitas

Ingredients
Salad
- 800g pumpkin wedges
- 1 broccoli
- 1 capsicum
- 1 can lentils
- 1 pack streaky bacon
- 1 pack balsamic dressing
- ½ pack baby spinach
- 100g feta cheese
To Serve
- 1 pack spicy pepitas

Cook pumpkin Preheat oven to 220oC. Toss pumpkin on a lined oven tray with a drizzle of oil. Season and roast for about 15 minutes, until nearly tender.

Cook veggies Roughly chop broccoli into bite-sized pieces and slice capsicum 1cm. Add both to tray with pumpkin and cook for a further 10 minutes, until tender. Rinse and drain lentils. Serve

Cook bacon Separate bacon slices and place on another oven tray. When veggies have 5 minutes cook time remaining, switch oven to high grill. Grill bacon for about 5 minutes, until golden.

Combine salad When veggies are cooked, toss with lentils, balsamic dressing and spinach. Slice bacon into 5cm lengths. Top salad with bacon and feta cheese, then season.
