Char Siu Pork with Rice

Ingredients
Rice
- 1½ cups jasmine rice
- 2¼ cups water
Pork
- 1 pack pork rump steaks
- 1 pack char siu sauce
Stir-Fried Veggies
- 2 carrots
- 1 baby bok choy
- 1 capsicum
- 1½ cups frozen peas
- ½ pack stir-fry sauce
To Serve
- Remaining stir-fry sauce

Cook rice Preheat BBQ hot plate or grill to medium (if using). Combine rice, water and a pinch of salt in a pot and bring to the boil. Once boiling, cover with a lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and steam, still covered, for 8 more minutes. Do not lift lid during cooking.

Prep pork and veggies Pat pork dry, then place in a bowl with char siu sauce and season. Leave to marinate for 5 minutes. Cut carrot in half lengthways and thinly slice; thinly slice bok choy and capsicum.

Cook pork Heat a drizzle of oil in a fry-pan on medium heat. Cook pork for 3-4 minutes each side for medium (depending on thickness), or until cooked to your liking. Alternatively, cook pork on BBQ. Set aside, covered, to rest while you cook veggies. Reserve pan.

Cook veggies Wipe out reserved pan and return to high heat with a drizzle of oil. Stir-fry veggies for 3-4 minutes until tender. Add ½ stir-fry sauce and toss to combine.

To finish Slice pork thickly against the grain.
