Cream Cheese Pizzas

Ingredients
Pizzas
- 3 pizza bases
- 1 pack tomato paste
- 2 Tbsp sweet chilli sauce ^
- 1 pack cream cheese
- 2 Tbsp basil pesto
- ½ red onion
- 1 pack mushrooms
- 1½ cups grated cheese
Salad
- ½ cos lettuce *
- 1 tomato
- 1 Lebanese cucumber
To Serve
- Reserved basil pesto

Prep pizza bases Preheat oven and two oven trays to 220°C. Cut one pizza base in half. Mix tomato paste, sweet chilli sauce and a drizzle of oil together in a bowl.

Prep topping In another bowl, mix together cream cheese and first measure of basil pesto. Thinly slice onion and mushrooms.

Make pizzas Spread tomato paste mixture over bases, sprinkle with cheese, onion and mushrooms and dollop with pesto cream cheese. Season.

Cook pizzas Place one and a half pizzas on each preheated tray. Cook for 12-14 minutes, until the base is crisp and golden around the edges. Swap trays halfway to ensure even cooking.

Prep salad Chop lettuce and dice tomato and cucumber 2cm. Toss all in a bowl with a small drizzle of oil and vinegar. Season.

Serve pizzas topped with remaining basil pesto and salad on the side.
