Bacon and Basil Pesto Pasta

Ingredients

Pasta

  • 1 pack pasta
  • 1 pack streaky bacon
  • 1 broccoli
  • 1 courgette
  • ½ pack cherry tomatoes
  • 1 pack basil pesto

Caesar Wedge

  • ½ iceberg lettuce
  • 1 cup finely grated cheese *
  • 1 pack Caesar dressing
  • ½ pack cherry tomatoes

Steps

  1. Cook pasta Bring a medium pot of salted water to the boil. Add pasta to pot of boiling water and cook for 10-12 minutes, until just tender. Drain well and return to pot with a drizzle of oil to prevent it sticking.
  2. Cook bacon Slice bacon 1cm. Heat a drizzle of oil in a large fry-pan on high heat. Cook bacon for 3-4 minutes, until golden. While bacon cooks, roughly chop broccoli into bite sized pieces; grate courgette and cut cherry tomatoes in half.
  3. Cook broccoli Add broccoli to pan and cook for about 1 minute. Add first measure of cherry tomatoes and cook for 1-2 minutes, until broccoli is tender and tomatoes are warmed through.
  4. Add pasta Remove pan from heat and add drained pasta, courgette and basil pesto. Toss well and season to taste.
  5. Make ceaser wedge Cut lettuce into 6 wedges and place on a serving plate. Sprinkle over grated cheese, drizzle over Caesar dressing and sprinkle over cherry tomatoes. Season to taste.
  6. Serve pasta with a Caesar wedge on the side.
