Tandoori Chicken & Feta Pizza with Sour Cream Drizzle

Ingredients
Pizza
- ¼ red onion *
- ½ capsicum *
- 1 pack chicken mince
- 1 pack tandoori paste
- 35g tomato paste
- 1 Tbsp sweet chilli sauce
- 2 tsp olive oil
- 1 pizza base
- 50g feta cheese *
Salad
- ½ bunch coriander, chopped
- 1 tsp mustard
- ½ cos lettuce *
- ½ telegraph cucumber *
Sour Cream Drizzle
- ¼ cup sour cream *
- ½ bunch coriander, chopped

Prep pizza ingredients Preheat oven to 220°C. Thinly slice onion and capsicum.

Cook chicken Heat a drizzle of oil in a large fry-pan on high heat. Cook chicken for about 3-4 minutes, stirring, until cooked through. Add tandoori paste and a pinch of salt and cook a further 1-2 minutes, until fragrant. Set aside.

Make pizza sauce Mix tomato paste, sweet chilli sauce and olive oil in a bowl. Place pizza base on an oven tray. Spread tomato mixture evenly over pizza base then sprinkle over feta cheese. Top with cooked chicken, onion and capsicum. Season.

Cook pizza Cook in oven for 12-14 minutes, until the base is crisp and golden around the edges.

Make dressing and salad Whisk together first measure of coriander, mustard, and a drizzle of olive oil and vinegar in a large bowl. Roughly chop lettuce; thinly slice cucumber. Add veggies to bowl with dressing, toss to combine and season to taste. Combine sour cream and second measure of coriander together in a small bowl and season.

Serve sour cream drizzled over pizza with salad on the side.
