
Beef Nachos with Corn Chips and Sour Cream

Ingredients
Beef Nachos
- 2 courgettes
- 2 carrots
- 450g beef mince
- 1 pack nacho beef blend
- 1 can mild chilli beans
- 1 cup GF beef stock
- 70g tomato paste
- 1 cup grated cheese *
- 2 tomatoes
To Serve
- 1-2 bags corn chips
- ¼ cup sour cream

Prep veggies and cook mince Preheat oven to high grill. Grate courgettes and carrots. Heat a drizzle of oil in a large, oven-proof fry-pan on medium-high heat. Cook beef mince, stirring, for about 4 minutes, or until just cooked. Add nacho beef blend and cook a further 1 minute, until fragrant.

Reduce heat to low and add chilli beans, stock, tomato paste, courgette, carrot and 1 tsp salt. Leave to simmer for 13-15 minutes, stirring occasionally. If you don’t have an oven-proof fry-pan, transfer beef mixture to an oven dish. Dice tomatoes 1cm.

Grill cheese Sprinkle beef mixture with cheese and place in oven for 1-2 minutes, or until cheese has melted. Top with diced tomatoes.

Serve beef with corn chips and sour cream.
