Beef Ragù with Gnocchi

Ingredients
Beef Ragù
- 1 brown onion
- 1 carrot
- 1 courgette
- 1 clove garlic
- 1 pack ragù spice mix
- 1 pack beef mince
- 1 can chopped tomatoes
- 1 pack tomato paste
- 1 cup water ^
- 2 tsp sugar ^
- 1 tsp balsamic vinegar ^
- 2 tsp tomato sauce ^
To Serve
- 1 pack potato gnocchi
- 1 cup grated cheese

Prep and cook veggies Bring a medium pot of salted water to the boil. Finely dice onion; grate carrot and courgette; mince garlic. Heat a small drizzle of oil in a large fry-pan on medium-high heat. Cook onion, carrot and garlic, stirring frequently, for about 4 minutes, until softened.

Add beef Add ragù spice mix and beef mince. Cook a further 3 minutes, breaking up beef as it cooks.

Add veggies Add courgette, canned tomatoes, tomato paste, water and 1 tsp salt. Bring to a simmer. Reduce heat to medium and simmer for 6-8 minutes, until thickened. Stir through sugar, vinegar and tomato sauce.

Cook gnocchi When beef ragù has 3 minutes cook time remaining, cook gnocchi in pot of boiling water for about 2 minutes, until it floats to the surface and is just tender. Reserve ½ cup of pasta cooking water, then drain. Return gnocchi to pot with a small drizzle of olive oil to prevent sticking.

Finish ragù Toss cooked gnocchi through beef ragù. Add ¼-½ cup reserved pasta water if sauce is too thick. Season (if needed).

Serve beef ragù sprinkled with cheese.
