Mexican Fish With Red Mexican Sauce And Guacamole

Ingredients

Salad

  • 1 capsicum, thinly sliced
  • 1 tomato, diced 1cm
  • 1 tomato, diced 1cm
  • 1 carrot, peeled into ribbons

SALSA

  • 1 can black beans, rinsed and drained
  • 1 can red Mexican sauce
  • Zest and juice of 1 lime

FISH

  • 1 pack market fish
  • 1 pack Mexican fish spice

TO SERVE

  • 1 pack guacamole
  • 1 pack chipotle crema
  • 1 pack Mexican seeds

Steps

  1. Preheat BBQ hot plate to medium-high (if using).
  2. . Prep salad. Add all ingredients to a bowl and toss to mix
  3. Prep salsa. Mix all salsa ingredients together in a bowl and season
  4. Prep fish. Pat fish dry and cut any larger fillets in half. Rub with Mexican fish spice and season.
  5. Cook fish. Heat 1 tsp oil in a non-stick fry pan on medium-high heat. Cook fish, in two batches (adding 1 tsp oil for second batch), for about 2 minutes each side (depending on thickness), or until just cooked. Alternatively, cook on BBQ. Rest for 1 minute, covered.
  6. Serve salad topped with salsa, fish, guacamole and chipotle crema. Sprinkle over Mexican seeds.
