Crumbed Chicken with Garlic Fries and Smoked Tomato Aioli

Ingredients
Fries
- 600g potato fries
- 1 tsp garlic salt
Chicken
- 550g chicken breasts
- ¾ cup panko breadcrumbs
- ½-1 pack chicken spice mix
Salad
- ½ telegraph cucumber
- 1 tomato
- ½ bag baby spinach
- 1 pack chopped walnuts (optional)
TO SERVE
- 1 pack smoked tomato aioli

Cook fries Preheat oven to 230ºC. Pat fries dry and toss on a lined oven tray with a drizzle of oil (don’t season). Bake on middle oven rack for 25 minutes, turning once during cooking. Turn oven grill to high and cook for a further 5 minutes, until golden and crispy. Sprinkle with garlic salt. Leave plain for fussier kids.

Prep chicken Pat chicken dry and cut into steaks. Place your hand flat on top of chicken and slice through horizontally. Season. Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook chicken for 2 minutes each side, until golden. Place on another lined oven tray

Crumb and cook chicken In a small bowl, mix breadcrumbs, chicken spice mix, a pinch of salt and a drizzle of olive oil. Mix well and divide over chicken steaks, pressing down to stick. Use plain breadcrumbs for fussier kids. Bake chicken on rack below fries, for 5-7 minutes, until golden and cooked through. Set aside.

Prep salad Dice cucumber and tomato 1cm, then roughly chop spinach. Add to a medium bowl with walnuts, a drizzle of olive oil and vinegar. Season to taste. Keep salad separate for fussier kids.

Serve chicken, fries and salad with smoked tomato aioli. Serve plain mayo or tomato sauce for fussier kids.
