Kumara & Beef Cottage Pie with Salad

Ingredients
Kumara
- 400g orange kumara
- 1 Tbsp butter
- 2 tsp milk
Cottage Pie
- ½ brown onion
- 1 carrot
- 1 pack beef mince
- 1 clove minced garlic
- 35g tomato paste
- 1 Tbsp beef spices
- ½ cup water
- 2 tsp soy sauce
- ½ cup grated Colby cheese (1 block grated Parmesan cheese in 3 night
Salad
- ¾ tsp mustard
- 1 tomato
- ½ bag baby spinach

Cook kumara Preheat oven to high grill. Dice kumara 2cm, add to a large pot and cover with hot tap water. Cook for 20-25 minutes on high heat with lid on, until very soft. Drain and mash with butter, milk and a pinch of salt until smooth. Season to taste.

Cook pie filling Finely dice onion and grate carrot. Heat a drizzle of oil in a medium fry-pan on high heat and cook beef mince for 3-4 minutes, stirring, until browned. Add onion and ½ tsp salt and cook a further 2-3 minutes, until softened. Reduce heat to medium-high.

Add garlic, carrot, salt, tomato paste and beef spices and cook for 2-3 minutes until carrot softens and spices are fragrant. Add water and simmer for 2-3 minutes, until thickened. Stir through soy sauce and season to taste. Pour mix into a baking dish.

Grill pie Evenly top beef mixture with mashed kumara and grate cheese over top. Grill for about 6 minutes, until bubbling and starting to brown.

Make salad Whisk mustard with a drizzle of vinegar and olive oil in a medium bowl. Dice tomato 2cm. Add with spinach to bowl with dressing. Toss to combine and season to taste.

Serve cottage pie with salad on the side.
