Char Siu Pork with Crispy Noodle Salad

Ingredients
Pork
- 1 pack pork scotch steak
- 1 pack char siu sauce
Noodle Salad
- ½ pack crispy noodle, peanut, almond and seed mix
- 1 baby bok choy ½ telegraph cucumber
- 1 carrot
- 1 pack lime ponzu dressing

Marinate pork Preheat BBQ hot plate or grill to high (if using). Pat pork dry and season lightly. Add to a small bowl and coat in char siu sauce. Leave to marinate for about 5 minutes.

Toast noodles Heat a medium, dry fry-pan on low-medium heat. Toast crispy noodle mix for 2-3 minutes, stirring often, until fragrant. Transfer crispy noodle mix to a medium bowl. Return pan to medium heat with a drizzle of oil.

Cook Pork Cook pork in pan for 3-4 minutes each side (depending on thickness), or until just cooked through. Rest, covered, for a few minutes before slicing thinly against the grain. Reserve resting juices. Alternatively, cook pork on BBQ grill or hot plate.

Prep vegetables Thinly slice bok choy, then peel cucumber and carrot into ribbons

Finish salad Combine vegetables in the bowl with toasted crispy noodle mix. Toss through lime ponzu dressing and any resting juices. Season.
