Halloumi and Kumara Fritters with Avocado Salsa and Mango Drizzle

Ingredients
Halloumi Fritters
- 4 eggs
- ½ cup milk
- 1 pack fritter flour
- 2 packs halloumi cheese
- 300g kumara
- 1 brown onion
Avocado Salsa
- ½ telegraph cucumber
- 1 avocado
- 2 capsicums
- 1 bunch basil
Mango Drizzle
- 3 Tbsp mango chilli sauce
- 3 Tbsp mayonnaise

Make fritter mix Preheat BBQ hot plate to medium-high (if using). In a large bowl, whisk together eggs, milk and fritter flour. Grate halloumi and kumara and thinly slice onion.

Squeeze kumara firmly to remove as much liquid as possible (you can squeeze it through a tea towel to help with this) and add to fritter mix along with grated halloumi and sliced onion. Season and fold together.

Cook fritters Heat a drizzle of oil in a large fry-pan on medium heat. Use a ¼ cup measure to scoop fritter mix into pan. Cook, in batches, for 2-3 minutes each side, until golden and cooked through. Set cooked fritters aside on paper towels, covered with foil between batches. Alternatively, cook fritters on BBQ. Turn pan down if fritters start to get too dark

Make salsa Dice cucumber, avocado and capsicums 1cm. Add to a medium bowl with basil and a drizzle of oil and vinegar and season.

Make mango drizzle Combine mango chilli sauce and mayonnaise in a small bowl. Season.

Serve fritters with salsa and mango drizzle.
