Tagliatelle Bolognese

Ingredients
Bolognese Sauce
- ½ brown onion
- 1 carrot
- 450g beef mince
- 70g tomato paste
- 1 can chopped tomatoes
- 1 pack Bolognese herb mix
- ½ bag baby spinach leaves
Pasta
- 400g tagliatelle pasta
To Serve
- ½ cup finely grated Parmesan cheese
- 1 bunch basil, chopped

Prep and cook veggies Bring a large pot of salted water to the boil. Finely dice onion and grate carrot. Heat a drizzle of oil in a large, deep fry-pan on medium heat. Add onion and carrot to pan. Cook for 3-4 minutes, until soft.

Cook beef Add beef mince to pan and cook for about 6 minutes, breaking beef up as it cooks, until browned.

Finish Bolognese sauce Stir in tomato paste, canned tomatoes, ½ teaspoon of salt, Bolognese herb mix and 1 cup water into the pan. Simmer for about 10 minutes, until sauce has reduced.

Cook pasta Use hands to separate strands of tagliatelle pasta. Cook in pot of boiling water for 4-6 minutes, until just tender. Drain well and return to pot with a drizzle of oil, to prevent sticking.

Add spinach Roughly chop spinach and add to Bolognese sauce. Cover pan and leave spinach to wilt for about 2 minutes. Season to taste.

To serve, Top pasta with Bolognese sauce, Parmesan cheese and basil.
