Lamb Kofta with Mint Salad and Yoghurt Dressing

Ingredients
Lamb Kofta
- ½ brown onion
- 300g lamb mince
- 1 pack lamb kofta mix
Salad
- 1 tomato
- ½ telegraph cucumber
- 2 radishes
- ½ bunch of mint, thinly sliced
- Juice of ½ lemon
- ½ bag baby spinach
Dressing
- 150g yoghurt
- ½ bunch mint, thinly sliced
Wraps
- 4 spinach wraps

Prep kofta Finely dice onion. Combine all lamb kofta ingredients together in a large bowl with 1 tsp salt. Shape into golf ball-sized balls.

Cook kofta Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook kofta for 10–12 minutes, turning regularly, until golden and cooked through. Reserve pan.

Prep salad Dice tomato and cucumber 1cm and thinly slice radishes. Combine in a bowl, along with first measure of mint, lemon juice, spinach and a drizzle of oil. Season.

Make dressing In a small bowl, mix together yoghurt and mint.

Warm wraps Wipe pan clean and return to high heat. Cook wraps, one at a time, for 30 seconds each side, until warmed through.

Serve wraps piled with kofta and salad and drizzle over dressing.
