Lamb Kofta with Couscous and Yoghurt Dressing

Ingredients
Kofta
- 1 brown onion
- 2 cloves minced garlic
- 600g lamb mince
- 1 tsp soy sauce
- 1 pack lamb kofta mix
- 1 egg
Couscous
- 1¼ cups water
- 1 pack sumac spice mix
- 1¼ cups couscous
Salad
- 1 tomato
- ½ telegraph cucumber
- 2 spring onions
- Bunch radishes
- 2 Tbsp thinly sliced mint leaves
- Juice of ½ lemon
Dressing
- 150g yoghurt
- 1 Tbsp thinly sliced mint

Prepare kofta Finely dice onion. Combine all kofta ingredients in a large bowl with 1 tsp salt. Shape into golf ball-sized balls and drizzle with olive oil.

Cook kofta Heat a drizzle of oil in a large fry-pan on medium-high heat and cook kofta, in 2 batches, for 8-9 minutes, turning regularly, until golden and cooked through.

Cook couscous In a medium pot, bring water and sumac spice mix to the boil. Remove from heat, add couscous, stir and cover with a lid. Leave to soak for 5 minutes before fluffing up grains with a fork.

Prepare salad Dice tomato and cucumber 1cm; thinly slice spring onions and radishes. Combine in a large bowl, along with first measure of mint, lemon juice and a drizzle of olive oil. Season to taste.

Make yoghurt In a small bowl, mix together yoghurt and mint.

To serve Spoon couscous, salad and lamb koftas onto each plate. Drizzle yoghurt over koftas and garnish with a drizzle of olive oil.
