CHIMICHURRI LAMB RUMP STEAKS WITH PEA AND PUMPKIN SALAD

Toss some chimichurri drizzle through the pumpkin to make it creamy and delicious. If you prefer, use spray oil instead of liquid.


Ingredients

PUMPKIN

  • 200g diced pumpkin
  • ½ red onion, cut into 1cm wedges
  • 125g frozen peas
  • 1 Tbsp Argentinian vinaigrette

LAMB

  • 275g lean lamb rump steaks
  • 2 tsp yoghurt
  • 1 tsp chimichurri spice mix
  • ½ tsp mustard

CHIMICHURRI DRIZZLE

  • ½ pottle yoghurt
  • ½ tsp chimichurri spice mix
  • 2 Tbsp chopped mint leaves
  • ¼ tsp honey

SALAD

  • ½ tomato, cut in half and thinly sliced
  • ½ beetroot, grated
  • 1/3 bag baby spinach
  • Remaining Argentinian vinaigrette

Steps

  1. Preheat oven to 230ºC. Preheat BBQ grill or hot plate to medium.
  2. Prep & cook pumpkin. Toss pumpkin and onion with ½ tsp oil on a lined tray. Season and roast for 20 minutes, until tender.
  3. Add peas to tray and roast a further 3-4 minutes. Remove from oven and toss through a pinch of salt and first measure of Argentinian vinaigrette.
  4. Prep lamb. Pat lamb dry, add to a medium bowl along with first measure of yoghurt, chimichurri spice mix and mustard. Toss to combine and season.
  5. Cook lamb. Heat ½ tsp oil in a medium fry-pan on medium-high heat. Cook lamb for about 4 minutes each side for medium (depending on thickness), or until cooked to your liking. Use BBQ if preferred. Rest, covered.
  6. Make chimichurri drizzle. Mix together remaining yoghurt, chimichurri spice mix, mint and honey in a small bowl. Season.
  7. Prep & make salad. Place tomato, beetroot and spinach into a medium bowl. Add remaining vinaigrette and toss well to coat.
  8. Slice lamb thinly against the grain, reserve resting juices.
  9. Serve pumpkin topped with lamb and salad on the side. Spoon over chimichurri drizzle and resting juices (if desired).
