Texan Pulled Beef Jacket Potatoes

Ingredients
Potatoes
- 1 packet pre-cooked potatoes
Pulled Beef
- 1 brown onion
- 1 carrot
- ½ broccoli
- 1 packet pulled beef spice mix
- 450g pulled beef
- 1 tsp Dijon mustard
- 1 tsp soy sauce
- ½ bag grated cheese

Cook potatoes Preheat oven to 230ºC. Pat potatoes dry and place on a lined oven tray, drizzle with oil and season. Cook for about 25 minutes, or until crispy and hot throughout. When potatoes are cooked, remove from oven and turn oven to high grill.

Start pulled beef Finely dice onion; grate carrot; finely chop broccoli. Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook onion for about 2 minutes, until soft. Add carrot, broccoli and salt and cook for a further 2-3 minutes, until softened. Add spice mix and ½ teaspoon of salt and cook for 1 minute, until fragrant.

Finish pulled beef Add pulled beef, mustard, soy sauce and 1½ cups of water. Bring to a simmer and cook for about 5 minutes, until sauce is thickened and beef is hot through. Season to taste.

Grill potatoes Cut cooked potatoes in half horizontally and open out. Use tongs to help with this, as they will be very hot. Top with pulled beef and grated cheese. Grill on middle oven rack for about 5 minutes, or until golden and crispy. Finely shred lettuce, toss with a drizzle of oil and vinegar and season.

To finish Divide jacket potatoes between plates. Top with sour cream and salsa roja (for adults) and sweet chilli sauce (for kids). Serve lettuce and any leftover pulled beef on the side.
