Chicken Chow Mein

Chicken Chow Mein

Ingredients

Sauce

  • 60g oyster sauce
  • ¼ cup soy sauce
  • 1 tsp honey
  • 1 Tbsp sesame oil
  • 1 Tbsp sweet chilli sauce

Chicken and Noodles

  • 550g chicken breasts
  • 1 baby bok choy
  • 2 carrots
  • 1 packet dried noodles
  • 1 pottle garlic and ginger paste
  • 1 cup frozen peas
  • 2 Tbsp sesame seeds
  • 2 Tbsp chopped coriander

Steps

  1. Marinate chicken Bring a medium pot of salted water to the boil. In a small bowl, whisk all sauce ingredients. Dice chicken 2cm and add to a medium bowl with 1 Tbsp of sauce, toss and set aside. Thinly slice bok choy and cut carrots into thin matchsticks.
  2. Cook noodles Cook noodles in pot of boiling water for 8-10 minutes, or until cooked through. Use a fork to separate strands then drain immediately. Return to pot with a drizzle of sesame oil to avoid sticking and set aside.
  3. Cook chicken Heat a drizzle of oil in a large fry-pan (or wok) on medium-high heat. Cook chicken, stirring often for about 4 minutes, until browned. Add garlic and ginger paste and cook for about 1 minute until fragrant.
  4. Add veggies Add carrots to pan with chicken and cook for 1-2 minutes. Add bok choy and peas and cook a further 1-2 minutes until just wilted, and chicken is cooked through.
  5. Add noodles Add noodles and remaining sauce to pan with chicken and veggies. Toss to warm through. Remove from heat.
  6. To serve Divide chicken chow mein between plates, sprinkle with sesame seeds and chopped coriander.
