Moroccan Beef with Spinach Couscous

Ingredients

Beef

  • 550g beef rump steaks
  • 1 Tbsp Moroccan spice mix (optional, adults)

Vegetables

  • 1 tomato
  • ½ red onion (optional, adults)
  • ½ bag baby spinach
  • 1 carrot
  • ½ lemon
  • 125g frozen peas

Couscous

  • 1 cup couscous
  • ½ tsp Moroccan spice mix
  • 1 Tbsp olive oil
  • 1 cup boiling water

To Serve

  • 50g feta cheese (optional, adults)
  • 2 Tbsp chopped coriander leaves (optional, adults)

Steps

  1. Marinate beef Bring a small pot of salted water to the boil. Pat beef dry and cut into 1cm strips. Leave some beef plain for those fussy foodies. Combine beef strips with first measure of Moroccan spice mix, a drizzle of oil and a pinch of salt. Set aside to marinate, for 5-10 minutes.
  2. Prep vegetables Dice tomato; finely dice onion; thinly slice spinach; grate carrot; zest and juice lemon. Combine all in a large bowl. Cook peas in pot of boiling water, for 1-2 minutes, or until tender. Drain well.
  3. Cook couscous In a large heat-proof bowl, combine all couscous ingredients with ½ tsp salt. Stir, cover and leave to swell, for 5 minutes. Fluff up grains with a fork.
  4. Cook beef steaks Heat a drizzle of oil in a large fry-pan on high heat. Cook beef in two batches, for 1-2 minutes for medium-rare, or until cooked to your liking.
  5. Make salad Toss couscous with all vegetables. Drizzle with olive oil and season.
  6. To serve Place couscous and beef onto plates, crumble over feta and sprinkle with coriander.
