Mexican Beef Quesadillas with Avocado Smash

Ingredients
Beef Quesadillas
- 1 red onion
- 3 stalks celery
- 600g beef mince
- 2 Tbsp Mexican spice mix
- 2 Tbsp tomato sauce
- ½ cup beef stock
- 1½ cups grated cheese
- 10 tortilla wraps
Chipotle Cream
- 125g sour cream
- ½-1 sachet chipotle sauce (optional, adults)
Avocado Smash
- ½ avocado
To Serve
- ½ iceberg lettuce

Prep veggies Preheat oven to 220°C. Finely dice onion and celery.

Cook beef filling Heat a drizzle of oil in a large fry-pan on high heat. Add beef and cook for 4-5 minutes, breaking up until browned. Add veggies and cook a further 2-3 minutes until softened. Add Mexican spice mix and 3/4 tsp salt and cook a further 1 minute, until fragrant. Add tomato sauce and stock and cook for 2-3 minutes until thickened.

Prep & cook quesadillas Lay tortillas out and spoon about ½ cup of beef filling over one half of each tortilla. Sprinkle over grated cheese. Fold to enclose the filling, forming a half round. Place on two lined oven trays and drizzle with oil. Bake for about 10 minutes, until tortillas are golden and crispy. Turn once to ensure both sides are crispy

Make chipotle cream Combine sour cream and chipotle sauce in a small bowl.

Make avocado smash Roughly mash avocado flesh with a fork and season. Use the other half of your avocado for brunch or lunch! Roughly chop lettuce and toss in a medium bowl with a drizzle of oil and vinegar and season.

To serve Cut each quesadilla into wedges and dollop with chipotle cream and avocado smash. Serve lettuce on the side.
