Chicken Tagine with Couscous and Yoghurt

Ingredients
Tagine
- 1 chicken tagine
Couscous and Yoghurt
- 1½ cups boiling water
- 1 pack couscous
- ½ telegraph cucumber
- 150g yoghurt
- 2 Tbsp chopped mint

Preheat oven to 180°C Remove plastic cover from chicken tagine and cover with foil. Place on an oven tray and cook for about 30 minutes, or until heated through. Stir halfway to ensure even cooking. Remove from oven, on tray. Alternatively, spoon meal into a baking or casserole dish and cook at 200ºC for about 25 minutes, until heated through.

Cook couscous Bring a full kettle to the boil. In a heat-proof bowl, combine boiling water, couscous and ¾ tsp salt. Stir, cover and leave to swell for 5 minutes, then fluff up grains with a fork.

To finish Finely dice cucumber.

To serve Spoon tagine into bowls and spoon couscous onto one side. Top with cucumber, a dollop of yoghurt and a sprinkle of mint.
