
Pulled Lamb Pizzas with Pea Smash

Ingredients
Lamb Pizzas
- 1 pack pulled lamb
- 1 pack lamb spices
- 1 pottle roasted red capsicum
- 1 can pizza sauce
- 2 pizza bases
- 2 cups grated cheese
Pea Smash
- 250g frozen peas
- 2 Tbsp mint
- 2-3 Tbsp mayonnaise
To Serve
- 1/3 bag baby spinach
- 1 pack feta cheese
- 1 Tbsp mint leaves
Steps

Preheat oven to 220°C. Preheat two oven trays. Bring a small pot of salted water to the boil.

Prepare lamb In a medium bowl, combine lamb with lamb spices and season. Thinly slice roasted capsicum.

Make pizza Spread 3-4 Tbsp of pizza sauce over each base, leaving an edge for the crust. Sprinkle cheese and capsicum evenly over bases. Top with pulled lamb and season. Add a sprinkle of chilli flakes to adult’s pizza to spice things up.

Cook pizza Transfer pizzas to preheated trays and cook for 12-14 minutes, until the base is crisp and golden around the edges. Swap trays halfway to ensure even cooking.

Cook pea smash Cook peas in pot of boiling water for 3-4 minutes, until soft. Roughly chop first measure of mint. Drain peas, return to pot and mash with mint and mayonnaise. Season to taste.

To serve Dollop each pizza with pea smash and cut into 6-8 pieces. Top with a handful of spinach, crumble over feta and sprinkle with remaining mint.
