Peri Peri Chicken Pizza

Ingredients
Pizzas
- 400g chicken thighs
- 2 tsp chicken spice mix
- ½ punnet cherry tomatoes
- 1 courgette
- ½ capsicum
- 3 wholemeal pizza bases
- 210g pizza sauce
- 1½ cups grated Colby cheese
Peri Peri Topping
- 2 Tbsp peri peri sauce
- 2 tsp mayo
Salad
- ¼ tsp Dijon mustard
- 1½ tsp olive oil
- 1 tsp white wine vinegar
- ¼ tsp honey
- 1/3 bag baby spinach
- ½ punnet cherry tomatoes

Prep and cook chicken Preheat oven to 220°C. Preheat two oven trays. Pat chicken dry, then cut into 1cm thick strips. Sprinkle over chicken spice mix to coat. Heat a drizzle of oil in a large fry-pan on high heat. Cook chicken for about 1 minute each side, until golden but not cooked through (will continue cooking in step 3). Set aside.

Prep pizzas Slice first measure of cherry tomatoes in half; peel courgette into ribbons; thinly slice capsicum. Lay two sheets of baking paper on the bench. Cut one pizza base in half, then place one and a half bases on each sheet of baking paper.

Make pizzas Spread pizza sauce over bases and sprinkle with cheese. Top with chicken and prepared vegetables. Carefully lift baking paper (with pizzas on top) and place on preheated oven trays, then carefully slide baking paper away (use a fish slice to help with this).

Cook pizzas and make topping Cook pizzas for 10-12 minutes, until cheese is melted and pizza bases are golden. Swap trays half way through time, to ensure even cooking. In a small bowl, mix peri peri sauce and mayo. Drizzle over pizzas and season.

Prep salad Whisk mustard, oil, vinegar and honey in a large bowl. For fussy foodies, keep some salad separate from the dressing . Finely slice spinach. Slice second measure of cherry tomatoes in half. Add all to bowl with dressing, toss to combine and season.

To serve Slice each pizza into 6-8 pieces and divide between plates. Place salad on the side.
