Mexican Braised Beef with Tortillas and Chipotle Sour Cream

Ingredients
Beef and Tortilla
- 1 Mexican braised beef
- 8 tortilla wraps
Chipotle Sour Cream
- 125g sour cream
- ½ -1 sachet of chipotle sauce
To Serve
- 1 iceberg lettuce
- Drizzle of white wine vinegar
- Drizzle of olive oil
- 2 pinches chilli flakes (optional)

Cook beef Preheat oven to 180°C. Remove braised beef from plastic and cover with foil. Place on a tray and cook for about 30 minutes or until heated through. Stir half way to ensure even cooking.

Make chipotle sour cream Combine sour cream and chipotle sauce in a small bowl.

Cook wraps and prepare lettuce Wrap tortillas in foil. When beef has 10 minutes cook time remaining, heat tortillas. Thinly shred lettuce and toss in a bowl with a drizzle of oil and vinegar.

To serve Fill wraps with Mexican braised beef, lettuce and a dollop of chipotle sour cream. Serve remaining beef and lettuce on the side. Top with chilli flakes.
