Beef Bolognese

Ingredients

Bolognese Sauce

  • 1 brown onion
  • 1 carrot
  • 450g beef mince
  • ¼ cup beef stock
  • 70g tomato paste
  • 1 punnet cherry tomatoes
  • 1 cup beef stock
  • 1 tsp dried oregano
  • 1 tsp sugar
  • ½ bag baby spinach *

Pasta

  • 350g tagliatelle pasta

To Serve

  • ½ block finely grated Parmesan cheese
  • 2 Tbsp chopped parsley

Steps

  1. Prep sauce Bring a large pot of salted water to the boil. Finely dice onion and grate carrot. Heat a drizzle of oil in a large, deep fry-pan, on medium heat. Cook beef mince for about 6 minutes, breaking up mince as it cooks, until browned.
  2. Cook sauce Add onion and carrot to pan. Cook for 3–4 minutes, until soft. Pour in first measure of stock and leave to evaporate, about 1 minute. Stir in tomato paste, cherry tomatoes, second measure of stock, dried oregano and sugar. Cover and simmer for about 10 minutes, until sauce has reduced.
  3. Cook pasta Use hands to separate strands of tagliatelle. Cook in pot of boiling water, for 4-6 minutes, until just tender. Drain well and return to pot with a drizzle of oil, to prevent sticking.
  4. Finish sauce Roughly chop spinach and sprinkle over Bolognese sauce. Cover and leave to wilt, for about 2 minutes, then stir through sauce. Season to taste.
  5. To serve Divide pasta between bowls and spoon over Bolognese sauce. Keep pasta and sauce separated for those fussy foodies. Sprinkle with Parmesan and parsley.
