Loaded Wedges with Bacon

Ingredients

Loaded Wedges

  • 1 pack pre-cooked whole potatoes
  • 1 pack streaky bacon
  • 1 Tbsp wedge spice mix
  • 1½ cups frozen corn *
  • ½ packet grated three cheese mix

Rocket salad

  • ½ punnet cherry tomatoes *
  • ½ telegraph cucumber *
  • ½ bag rocket *

To Serve

  • 1 pottle sour cream

Steps

  1. Preheat oven to 230°C.
  2. Cook wedges Cut potatoes lengthways into quarters (or 6 if larger) and cut bacon into 4cm lengths. Toss on a lined oven tray with wedge spice mix and a drizzle of oil. Season and cook for about 10 minutes, until potatoes are warmed through.
  3. Make salad Cut tomatoes in half and peel cucumber into ribbons. Toss both in a medium bowl along with rocket, a drizzle of oil and 1 tsp balsamic vinegar. Season to taste.
  4. Grill wedges When wedges have finished cooking, remove tray from oven, and turn oven to high grill. Separate wedges into serving sizes on the tray and sprinkle over corn and cheese. Place under grill for 5-10 minutes, until cheese has melted and potatoes and bacon are crispy.
  5. Scoop loaded wedges into bowls and top with a dollop of sour cream. Serve rocket salad on side
