Japanese Marinated Beef with Teriyaki Dressing

Ingredients

Brown Rice

  • 1 pack Japanese brown rice

Marinated Beef

  • 1 pack beef sirloin steaks
  • 1 pottle beef marinade

Sesame Salad

  • 1 carrot
  • ½ telegraph cucumber *
  • 1 baby bok choy
  • ½ bag baby spinach *
  • 1 pottle sesame mayo

To Serve

  • 1 pottle teriyaki sauce
  • 1 sachet sesame seeds

Steps

  1. Cook rice Combine rice, 2¼ cups of water and a pinch of salt in a medium pot and bring to the boil. Once boiling, cover with a lid and reduce to lowest heat to cook for 15 minutes. Turn off heat and steam, covered, for 8 more minutes. Do not lift lid during cooking.
  2. Marinate beef Pat beef dry and add to a bowl with beef marinade. Toss well to coat. Set aside to marinate while you prepare the rest of the meal.
  3. Prepare sesame salad Grate carrot; cut cucumber in half lengthways then thinly slice; thinly slice bok choy; roughly chop spinach. Toss together in a medium bowl and set aside.
  4. Cook beef Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook beef for 3-4 minutes each side for medium (depending on thickness), or until cooked to your liking. Rest, covered.
  5. Finish beef and salad Thinly slice beef against the grain. Toss back through resting juices and season to taste. Combine sesame mayo with salad ingredients in bowl and season to taste.
  6. Spoon rice into bowls and top with beef, sesame salad, teriyaki dressing and sesame seeds.
