Greek Lamb Pizza with Yoghurt Drizzle and Sesame Cauliflower

Ingredients
Pizza
- ½ red onion *
- ½ capsicum *
- 2 Tbsp tomato paste
- 1 Tbsp sweet chilli sauce
- 1½ tsp olive oil
- 1 pizza base
- ½-¾ cup grated Parmesan cheese
- 200g Greek lamb mince
- 50g feta cheese *
Sesame Cauliflower
- ¼ cauliflower *
- 1 carrot
- 2 tsp butter (optional)
- 15g sesame seeds
- 1-2 tsp vinegar
- 1-2 tsp sweet chilli sauce
Yoghurt Drizzle
- ¼ cup yoghurt
- ½ tsp white wine vinegar
- ½ tsp honey

Prep veggies Preheat oven to 220oC. Preheat an oven tray (or pizza stone if you have one). Thinly slice onion and finely dice capsicum. In a small bowl, combine tomato paste, sweet chilli sauce and olive oil.

Make pizza Place pizza base on a clean bench. Spread tomato paste mixture evenly over base. Sprinkle over cheese, onion and capsicum. Using clean hands, tear away small amounts of lamb mince and dot on top. Crumble over feta cheese and season.

Cook pizza Carefully lift pizza and place onto preheated tray (or stone). Cook pizza 12-14 minutes, until base is crisp and golden around the edges and mince is cooked.

Prepare cauliflower Cut cauliflower into small florets and peel carrot into ribbons. Heat a drizzle of oil in a medium fry-pan on medium-high heat. Cook cauliflower for about 3 minutes until nearly tender.

Add butter and sesame seeds to pan and cook a further 1 minute until fragrant. Remove from heat, add carrot, vinegar and sweet chilli sauce. Toss to combine and season to taste. In a small bowl, combine yoghurt, honey and vinegar until smooth. Slice pizza into 6-8 pieces.

To serve, divide slices of pizza and sesame cauliflower between plates. Spoon yoghurt drizzle over pizza and cauliflower just before serving.
