Ham & Pineapple Pizza

Ingredients
Pizzas
- ½ red onion (optional) *
- Diced champagne ham
- 2 pizza bases
- 1 can pizza sauce
- ¼ bag baby spinach *
- 1½ cups grated Edam cheese *
- ½ cup frozen sweetcorn (optional) *
- 1 can pineapple pieces
Dressing
- 3 Tbsp sour cream *
- 1 tsp water
- 1 tsp white wine vinegar
Salad
- 1 carrot
- 1 baby cos lettuce
To Serve
- 1 tsp chipotle sauce (optional, adults)

Preheat oven to 210oC. Preheat two oven trays. Thinly slice onion. Divide pizza sauce between bases and spread to cover. Sprinkle spinach over bases, then top with cheese, onion (if using), diced ham, corn (if using) and pineapple. Season.

Transfer pizzas to preheated trays and cook for 12-15 minutes, until the base is crisp and golden around the edges. Swap trays halfway, to ensure even cooking.

While pizzas are cooking, mix all dressing ingredients together in a small bowl.

Peel and grate carrot, roughly chop baby cos and add to a medium bowl. Add 1 tablespoon of dressing to bowl and toss to combine.

To serve Place pizzas and salad on the table for everyone to help themselves. Drizzle with a little of the remaining dressing and some chipoltle sauce (if using).
