Pulled Beef Kumara with Sour Cream

Ingredients

Kumara

  • 600g baby kumara

Pulled Beef

  • 1 brown onion
  • 1 carrot
  • 1 courgette
  • 2 tsp pulled beef spices
  • 400g pulled beef
  • 400g can chopped tomatoes
  • ½ cup GF beef stock
  • 1 tsp GF balsamic vinegar
  • ½ tsp GF soy sauce
  • ½ tsp salt

To Serve

  • 1 baby cos lettuce
  • 70g grated Parmesan cheese
  • 125g sour cream

Steps

  1. Preheat oven to 230°C Cut baby kumara in half lengthways and place on a lined oven tray, skin side down, with a drizzle of oil. Season and cook for about 25 minutes, until tender.
  2. Prep veggies and Parmesan While kumara cooks, finely dice onion; grate carrot and courgette; thinly shred lettuce; grate Parmesan. Keep separate and set aside.
  3. Cook pulled beef Heat a drizzle of oil in a large fry-pan, on medium heat. Add onion and carrot to pan. Cook for 2-3 minutes, until softened. Add pulled beef spices and pulled beef. Cook for 2-3 minutes, until fragrant. Break up mince as it cooks.
  4. Finish pulled beef Add remaining pulled beef ingredients (except courgette) and simmer on medium heat, for 6-8 minutes, until sauce has thickened. Stir through grated courgette and season to taste.
  5. To serve Divide kumara between plates and sprinkle over Parmesan. Top with pulled beef mixture, lettuce and a dollop of sour cream.
