Sweet Chilli Chicken with Broccoli Salad and Peanut Dressing

Ingredients

CHILLI CHICKEN

  • ½ tsp oil or spray oil
  • 140g lean chicken breast strips
  • ¼ brown onion, thinly sliced *
  • ¾ tsp garlic ginger paste
  • 20g sweet chilli sauce

DRESSING

  • 1 Tbsp peanut butter
  • Pinch of chilli flakes (optional)
  • 1 Tbsp chopped mint *
  • ¾ Tbsp soy sauce
  • ½ tsp garlic ginger paste
  • 1 tsp rice wine vinegar
  • ¼ tsp honey (optional)

SALAD

  • ½ broccoli, cut into small florets
  • 2 radishes, thinly sliced
  • ½ Lebanese cucumber, thinly sliced *

TO SERVE

  • 1 Tbsp chopped coriander *
  • 1 Tbsp sesame peanut mix
  • ½ lime, cut into wedges *

Steps

  1. Bring a medium pot of salt water to the boil.
  2. . Begin chicken. Heat oil in a medium fry-pan on high heat. Add chicken to pan and leave to sear for about 2 minutes, then stir-fry for 1-2 minutes, until almost cooked. Add onion and first measure of garlic ginger paste to pan. Continue to stirfry for 2-3 minutes, until onion is browned and chicken is cooked through.
  3. Finish chicken. Transfer chicken to a small bowl, toss with sweet chilli sauce and season. Set aside, covered.
  4. Make dressing. In a medium bowl, add a splash of hot water, peanut butter, chilli (if using), mint, soy sauce, second measure of garlic ginger paste, vinegar and honey (if using). Whisk until smooth
  5. Prep & cook salad. Cook broccoli in pot of boiling water for 3-4 minutes, until bright green and tender. Drain well.
  6. Add cooked broccoli and remaining salad ingredients to bowl with dressing. Toss to combine and season.
  7. Prep garnishes.
  8. To serve, place salad into a bowl and top with chilli chicken. Sprinkle over coriander and sesame peanut mix. Squeeze over lime wedges.
