Beef Bolognaise

Ingredients
Bolognese Sauce
- 1 brown onion
- 2 carrots
- bag baby spinach *
- 1 Tbsp olive oil
- 450g beef mince
- ¼ cup red wine or GF beef/ chicken stock
- 70g tomato paste
- 400g can cherry tomatoes
- 1 cup GF beef/chicken stock
- 1 tsp dried oregano
- 1 tsp sugar
To Serve
- 340g spaghetti
- ½ cup grated cheese *
- 2 Tbsp chopped parsley *

Prep veggies Bring a large pot of salted water to the boil. Finely dice onion, grate carrots and roughly chop spinach.

Cook mince Heat oil in a large, deep, fry-pan on medium heat. Cook mince for about 6 minutes, breaking it up, until browned.

Add veggies Add onion and carrot to pan with mince. Cook for 3–4 minutes, until soft. Pour in red wine/stock and leave to evaporate, about 1 minute.

Cook Bolognese sauce Stir in tomato paste, cherry tomatoes, chicken/beef stock, oregano and sugar. Cover and simmer for about 10 minutes, until sauce has reduced.

Cook spaghetti and finish sauce Cook spaghetti in a pot of boiling water, for about 10 minutes, until just tender. Drain well and return to pot with a drizzle of olive oil, to prevent it sticking. Add spinach to Bolognese sauce, cover and leave to wilt, for about 2 minutes. Stir spinach through sauce and season.

To serve Divide spaghetti between bowls and spoon over Bolognese sauce. Sprinkle over cheese and parsley.
