Lamb Pasta Bake with Caper Crumb

Ingredients
Pasta Bake
- ½ brown onion *
- 1 parsnip
- 1 courgette
- 300g lamb mince
- 1 Tbsp lamb spice mix
- ½ tsp salt
- ¼ cup red wine or beef stock
- 400g jar tomato passata
- ¼ cup beef stock
- ½ tsp soy sauce
- ½ tsp sugar
- 1/3-½ pack penne pasta
Caper Crumb
- ½ cup panko breadcrumbs
- ½ tsp lamb spice mix
- 15-30g capers
- ¼ cup finely grated Parmesan cheese
- ¼ tsp salt
Salad
- 1 baby cos lettuce
- 2 Tbsp finely grated Parmesan cheese
- 1 Tbsp mayonnaise

Prep veggies Preheat oven to high grill. Bring a large pot of salted water to the boil. Grease 20 x 25 cm baking dish. Finely dice onion and grate parsnip and courgette. Heat a drizzle of oil in a large fry-pan on high heat. Cook onion, parsnip and courgette for 2-3 minutes, until starting to soften.

Add lamb mince, lamb spice mix and salt to pan and cook for 4-5 minutes, breaking mince up as it cooks, until starting to brown. Add wine/first measure of stock and cook a further 1 minute, until almost evaporated. Add passata, second measure of stock, soy sauce and sugar and stir to combine. Reduce heat to medium and cook lamb sauce for a further 5 minutes, until sauce has thickened. Season to taste.

Cook pasta Add pasta to pot of boiling water and cook for about 10 minutes until just tender. Drain and return to pot with a drizzle of olive oil.

Cook pasta bake Combine caper crumb ingredients in a small bowl and set aside. Feel free to adjust the amount of capers to suit your taste. When lamb sauce is ready, add to pot with pasta and stir to combine. Pour into prepared dish and evenly sprinkle over caper crumb. Grill for about 2-3 minutes until crumb is golden.

Prep salad Roughly chop lettuce. Place in a large bowl with second measure of Parmesan and mayonnaise and toss to combine.

To serve Divide lamb pasta bake between plates and serve salad on the side.
