Lamb Pasta Bake with Caper Crumb

Ingredients
Pasta Bake
- 1 brown onion
- 1 parsnip
- 600g lamb mince
- 2 Tbsp lamb spice mix
- 1 tsp salt
- ½ cup red wine or beef stock
- 680g jar tomato passata
- ½ cup beef stock
- 1 tsp soy sauce
- 1 tsp sugar
- ¾ pack penne pasta
Caper Crumb
- 1 cup panko breadcrumbs
- 1 tsp lamb spice mix
- 30g capers
- ½ cup finely grated Parmesan cheese
- ½ tsp salt
Salad
- 1 baby cos
- ½ telegraph cucumber
- ¼ cup finely grated Parmesan cheese
- 2-3 Tbsp mayonnaise

Preheat oven to high grill. Bring a large pot of salted water to the boil. Grease a 30 x 30cm baking dish. Finely dice onion and grate parsnip. Heat a drizzle of oil in a large fry-pan on high heat. Cook onion and parsnip for 2-3 minutes, until starting to soften.

Add lamb mince, lamb spice mix and salt to pan and cook for 4-5 minutes, breaking mince up as it cooks, until starting to brown. Add wine/first measure of stock and cook a further 1 minute, until almost evaporated. Add passata, second measure of beef stock, soy sauce and sugar and stir to combine.

Cook lamb sauce for a further 5 minutes, until sauce has thickened. Season to taste. While lamb sauce cooks, add pasta to pot of boiling water and cook for about 10 minutes until just tender. Drain and return to pot with a drizzle of olive oil.

Combine caper crumb ingredients in a medium bowl. When lamb sauce is ready, add to pot with pasta and stir to combine. Pour into prepared baking dish and evenly sprinkle over caper crumb. Grill for about 2 minutes until crumb is golden.

Roughly chop lettuce and dice cucumber 2cm. Place in a large bowl with second measure of Parmesan and mayonnaise and toss to combine.

Divide lamb pasta bake between plates and serve salad on the side.
