Goma Dare Beef with Bok Choy

Ingredients

Brown Rice

  • 1½ cups Japanese brown rice

Beef

  • 1 pack beef sirloin steaks
  • 1 Tbsp goma dare
  • 2 tsp soy sauce

Veggies

  • 2 baby bok choy
  • 1 carrot
  • 1 courgette
  • 1 pottle garlic and ginger paste

Steps

  1. Cook rice Combine rice, water and a pinch of salt in a pot and bring to the boil. As soon as it boils, cover with a tight-fitting lid and reduce to lowest heat for 15 minutes. Turn off heat and leave to steam, still covered, for a further 8 minutes. Do not lift lid during cooking. Mix 1 tsp sesame oil through rice for a flavour boost.
  2. Prepare beef and veggies Pat beef dry and season. Toss in a medium bowl with first measure of goma dare and soy sauce and set aside. Thinly slice bok choy; cut carrot and courgette in half lengthways then thinly slice and set aside.
  3. Cook beef Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook beef for 2–3 minutes each side, for medium-rare (depending on thickness), or until cooked to your liking. Set aside to rest, covered, for 2-3 minutes. Reserve pan.
  4. Cook veggies Return pan to high heat with a drizzle of oil. Add carrot and courgette and cook for 2 minutes. Add bok choy and garlic and ginger paste and cook a further 1-2 minutes, stirring constantly until veggies are just tender. Season to taste with salt or soy sauce.
  5. Finish beef Slice beef thinly against the grain, then toss back through resting juices before serving.
  6. Spoon rice into bowls and top with veggies, beef and a drizzle of Goma dare. Spice it up with some chilli flakes!
