Lamb Sausage Rolls with Tomato Relish

Ingredients

Sausage Rolls

  • ½ brown onion
  • ½ carrot
  • ½ courgette
  • 450g lamb mince
  • 2 Tbsp panko breadcrumbs
  • 1 tsp salt
  • 375g flaky puff pastry
  • 1 egg
  • 15g sesame seeds

Salad

  • 1 tsp white wine vinegar
  • 1 tsp Dijon mustard
  • 2 tsp olive oil
  • ¼ tsp honey
  • 1 carrot
  • ½ courgette
  • 1 baby cos lettuce

To Serve

  • ½ jar tomato relish

Steps

  1. Preheat oven to 220°C. Line an oven tray with baking paper. Finely dice onion and grate first measures of carrot and courgette. Add to a large bowl with mince, breadcrumbs and salt. Mix well to combine.
  2. Unroll pastry and place paper-side-down on a clean, flat surface then slice in half lengthways.
  3. Divide mince mixture into two even portions. Shape into two long sausages (about 4cm thick) to fit each pastry sheet, lengthways down the centre. Whisk egg and brush pastry lightly with egg where the pastry will over lap. Roll up pastry to form two sausage rolls.
  4. Cut each roll into 6 even-sized pieces. Place on prepared tray, seam side down, and brush with remaining egg and sprinkle with sesame seeds. Bake for 20 minutes, reduce temperature to 200°C and bake a further 5 minutes, until pastry is puffed and golden.
  5. While sausage rolls cook, mix vinegar, mustard, oil and honey in a large bowl. Grate second measures of carrot and courgette and thinly slice lettuce. Add to bowl with dressing. Toss to combine and season to taste.
  6. To serve, divide lamb sausage rolls between plates with a dollop of tomato relish on the side. Serve salad on the side.
