Braised Beef Silverside with Mash and Veggie Bake

Ingredients
Beef
- 1 pack braised beef silverside
Mash
- 600g potatoes
- ½ cup milk
- 1 Tbsp butter
- ¼ tsp salt
Veggie Cheese
- 1 broccoli
- ½ cauliflower
- 3 Tbsp butter
- 3½ Tbsp flour
- 3 cups milk
- 1 tsp wholegrain mustard (optional)
- ½ tsp salt
- 50g baby spinach
- ½ cup grated Parmesan cheese
- ¼ cup panko breadcrumbs

Preheat oven to 220°C. Bring a large pot of water to the boil. Set aside an oven dish (measuring about 20 x 23cm). Place unopened pack of beef silverside into pot of boiling water and simmer for about 30 minutes.

While beef is heating, bring two medium pots of salted water to the boil. Peel and dice potatoes 2cm. Cut broccoli and cauliflower into small florets. Cook broccoli and cauliflower in first pot of water for 3-4 minutes, until tender. Drain well and set aside. Reserve pot.

Melt second measure of butter in reserved pot on low heat. Stir in flour and cook for about 1 minute. Gradually whisk in second measure of milk, stirring constantly. Bring to a gentle simmer and cook for 2-3 minutes, until thickened, stirring frequently. Add mustard and salt and season to taste.

Place broccoli and cauliflower into reserved oven dish and toss through spinach. Pour over sauce to cover and top with cheese and breadcrumbs. Bake for about 15 minutes until cheese is melted and golden.

Cook potatoes in second pot of water for 12-15 minutes, until very soft. Drain well and mash with first measures of milk, butter and salt until smooth. Carefully remove beef from pack and pour any juices into a medium bowl. Thinly slice beef and place in bowl with cooking juices, covered to keep warm.

To serve, divide potato and sliced beef between plates and serve veggie cheese on the side.
