Lamb Tacos with Sour Cream

Ingredients
Lamb Tacos
- 1 brown onion
- 1 carrot
- 2 tsp taco spice mix
- 450g lamb mince
- ½ cup chicken stock
- ½ tsp balsamic vinegar
- ¼ tsp salt
- 1 can mild chilli beans
To Serve
- 10 wholewheat tortilla wraps
- 75g baby spinach
- ¾ cup grated Parmesan cheese
Sour Cream
- 1 tomato
- ½ cup sour cream
- 2½ tsp Mexican spice mix
- ¼ tsp white wine vinegar

Preheat oven to 200°C. Finely dice onion and grate carrot. Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook onion for 3-4 minutes, until softened.

Add taco spice mix, lamb mince and carrot and cook for 3-4 minutes, breaking up mince as it cooks, until browned.

Add all remaining lamb taco ingredients to pan and simmer for about 5 minutes, until sauce has thickened.

While mince is cooking, wrap tortillas in foil and warm in oven for 5 minutes. Thinly slice spinach.

Finely dice tomato and place into a small bowl, add all remaining sour cream ingredients and mix well.

To serve, divide tortillas between plates and fill with lamb mixture, spinach, cheese and a dollop of sour cream. Roll up and enjoy.
