Pulled Beef Stroganoff with Herbed Mash

We’ve taken a classic and put a winter warming spin on it – a rich and creamy stroganoff using pulled beef. Pop the slow coooker on in the morning so you can come home to incredibly moist pulled beef, and all the hard work has been done!


Ingredients

Stroganoff

  • 800g beef cross cut
  • 2 cloves minced garlic
  • 2 Tbsp beef spice mix
  • 2 Tbsp flour
  • 1 brown onion
  • 1 carrot
  • 1-2 tsp beef stock powder
  • ¼ cup red wine or beef stock
  • 1 tsp salt
  • 70g tomato paste
  • 1 punnet white button mushrooms
  • 75g baby spinach
  • ½ pottle yoghurt

Mash

  • 800g agria potatoes
  • 2 Tbsp butter
  • ¼-½ cup milk
  • 2 Tbsp parsley

To Serve

  • 30g crispy shallots
  • 1 Tbsp parsley

Steps

  1. Pat beef dry, season (dice 2 cm if using oven) and rub with garlic, beef spice mix and flour. Season. Thinly slice onion and dice carrot 1cm. Place all in the slow cooker/casserole dish, cover and set aside.
  2. Combine beef stock powder and boiling water in a heat-proof bowl (1 cup for slow cooker, 2 cups for oven) add red wine/stock, salt and tomato paste, cover and set aside.
  3. Cut mushrooms in half and add to slow cooker/casserole dish. Pour over stroganoff sauce, cover and cook in slow cooker for about 9 hours, or in oven for about 2 hours. Meat will pull apart easily when ready. For slow cooker method, remove beef and set aside to rest.
  4. 25 minutes before serving, bring a pot of salted water to the boil. Peel and dice potatoes 2cm. Cook for about 12-15 minutes until tender. Chop first measure of parsley. Drain potatoes and return to pot with butter, milk and parsley. Season to taste.
  5. For slow cooker method, roughly pull beef with 2 forks and add back to slow cooker. For oven method, break up the beef roughly once cooked and stir well to incorporate into sauce. Add spinach and yoghurt to slow cooker/dish and stir to combine. Season to taste.
  6. Divide mash between bowls and top with beef stroganoff and a sprinkle of crispy shallots and parsley leaves.
