Pulled Pork Sliders with Cheesy Kumara Wedges

Ingredients

Wedges

  • 600g kumara
  • 1 tsp pork slider spice mix
  • ½ tsp salt
  • 1 cup grated cheese

Sliders

  • 1 carrot
  • ½ red onion
  • 2 tsp pork slider spice mix
  • ½ cup chicken stock
  • 450g pulled pork
  • ½ tsp Worcestershire sauce
  • 10 slider buns

Salad

  • 1 tomato
  • ½ red onion (optional)
  • ½ cos lettuce
  • ¼ cup mayonnaise

Steps

  1. Preheat oven to 220°C. Line an oven tray with baking paper. Cut kumara into 1cm wedges, toss on prepared tray with a drizzle of oil, pork slider spice mix and salt. Roast for about 25 minutes, until golden and tender. Turn once during cooking.
  2. While kumara cooks, grate carrot and finely dice first measure of onion. Heat a drizzle of oil in a medium fry-pan on medium-high heat. Cook carrot and onion for 2-3 minutes until softened.
  3. Add pork slider spice mix and cook for about 30 seconds until fragrant. Reduce heat to medium. Add stock, pulled pork and Worcestershire sauce, cook for a further 2-3 minutes, until stock has thickened. Remove from heat, season to taste and cover to keep warm.
  4. While pork cooks, thinly slice tomato and second measure of onion (if using) and shred lettuce. Set all aside separately.
  5. Slice buns in half horizontally. When kumara has 5 minutes cook time remaining, remove tray from oven and move kumara to one side. Sprinkle with grated cheese and place buns, closed to keep moist, on one side. Cook for 4-5 minutes, until buns are warmed through and cheese has melted.
  6. To serve, spread mayo on both sides of sliders. Fill with salad and pulled pork and serve cheesy wedges on the side. Serve any extra salad on the side with a drizzle of olive oil.
