Beef Pave Steak with Pumpkin Mash and Mushroom Sauce

Ingredients

PUMPKIN MASH

  • 200g peeled, diced pumpkin
  • ¼ tsp extra-virgin olive oil

BEEF PAVE STEAK

  • 140g lean beef pave steak (at room temperature)
  • ¾ tsp beef spice mix
  • ¼ tsp oil

MUSHROOM AND BROCCOLI SAUCE

  • ¼ brown onion
  • ½ punnet mushrooms
  • ¼ broccoli
  • ½ tomato
  • ½ clove garlic
  • 1-2 Tbsp basil
  • Spray oil
  • ¼ tsp salt
  • ½ cup chicken stock
  • 2 Tbsp lite sour cream

Steps

  1. Bring a medium pot of salted water to the boil. Preheat BBQ grill or hot plate to medium-high (if using).
  2. Cook pumpkin in pot of boiling water for 18-20 minutes, until tender. Drain well, return to pot and mash until smooth.
  3. Stir through olive oil, season to taste and set aside, covered to stay warm.
  4. Heat oil in a medium fry-pan (with a lid) on medium heat. Pat beef dry, rub with beef spice mix and season.

  6. While beef cooks and rests, prepare sauce veggies. Thinly slice onion and mushrooms; dice broccoli 1-2cm; dice tomato 1cm; finely chop garlic; thinly slice basil.
  7. Return reserved pan to a high heat with oil. Cook onion, mushroom and garlic with salt for 3-4 minutes. Reduce heat to medium, add broccoli, stock and tomato. Cover with a lid and cook for 3-4 minutes, until broccoli is tender with a bite.
  8. Remove pan from heat, stir through sour cream and basil, along with beef resting juices. Season to taste. Thinly slice beef against the grain.
  9. To serve, spoon pumpkin mash onto a plate. Place sliced beef steak on the side and spoon over mushroom and broccoli sauce.
