Marinated Beef with Roasties and Feta Salad

Alternatively, preheat BBQ hot plate or grill to medium. Cook beef steaks for 2 minutes each side, depending on thickness, for medium rare or cooked to your liking. Set aside on a plate, covered to rest for 5 minutes, slice thinly against the grain.
Ingredients
Beef
- 550g beef rump steaks (at room temperature)
- 2 tsp beef herb mix
Roasties
- 600g potatoes
- 1 broccoli
Veggies
- 1 carrot
- 1 courgette
- 100g feta cheese
Sauce
- 1 tsp butter
- 1½ tsp flour
- 1 cup beef stock

Preheat oven to 220°C. Line an oven tray with baking paper. Pat beef dry, place on a plate with a drizzle of oil. Season with salt, pepper and beef herb mix. Allow to marinate while cooking the potatoes.

Dice potatoes 3cm. Toss on prepared tray with a drizzle of oil and season. Cook for 30 minutes until golden and crispy. While potatoes cook, cut broccoli into small florets. When potatoes have 10 minutes remaining, add broccoli to tray, toss to combine and return to oven.

In a medium bowl, whisk mustard, vinegar and olive oil. Peel carrots and courgettes into ribbons. Crumble feta and add to bowl with dressing along with vegetables. Toss and season to taste just before serving.

Heat a drizzle of oil in a large (preferably non-stick) fry-pan on medium-high heat. Cook beef for about 2 minutes each side for medium (depending on thickness) or until cooked to your liking. Set aside on a plate, covered to rest, before thinly slicing against the grain.

Return fry-pan to high heat, add butter and flour and cook, stirring constantly for 30 seconds. Add beef stock and cook for 2-3 minutes until slightly thickened. Season to taste.

To serve, divide potato and marinated beef between plates. Spoon sauce over beef and serve salad on the side.
