Chicken Satay Pizza

If you have any veggies left from pizzas, add to the spinach salad. You can freeze pizza bases on arrival to keep fresher if desired.


Ingredients

Chicken Satay

  • 400g chicken thighs
  • 2 tsp chicken spice mix
  • 1 sachet peanut butter
  • 1 Tbsp soy sauce
  • ½ Tbsp rice wine vinegar
  • 1 Tbsp sweet chilli sauce
  • 1 Tbsp mayonnaise

Pizzas

  • 1½ cups grated cheese
  • 1 tomato
  • 1 tomato
  • ½ capsicum
  • 3 wholemeal pizza bases
  • 70g tomato paste
  • ¼ cup water
  • 1 Tbsp sweet chilli sauce

Salad

  • ¼ tsp wholegrain mustard
  • 1½ tsp olive oil
  • 1 tsp rice wine vinegar
  • ¼ tsp maple syrup/honey
  • ½ bag baby spinach
  • 1 tomato
  • ½ capsicum

Steps

  1. Preheat oven to 220°C. Preheat two oven trays. Pat chicken dry, sprinkle over chicken spice mix to coat chicken. Heat a drizzle of oil in a large fry-pan on high heat and cook chicken for about 1 minute each side, until golden but not cooked through (it will continue cooking in step 4). Thinly slice.
  2. In a medium bowl, mix remaining chicken satay ingredients, add sliced chicken and set aside. Grate cheese; dice tomato 1cm; peel courgette into ribbons and thinly slice capsicum. Cut one pizza base in half and place one and a half bases on each sheet of baking paper.
  3. In a small bowl, mix tomato paste, water and sweet chilli sauce. Evenly spread pizza sauce over bases and sprinkle with cheese. Top with chicken and veggies then transfer pizzas to preheated trays.
  4. Cook pizzas for 10-12 minutes, until cheese is melted and pizzas are golden. Swap trays halfway through cooking to ensure even cooking.
  5. While pizzas cook, prepare the salad. Whisk mustard, oil, vinegar and maple syrup (or honey) together in a medium bowl. Roughly chop spinach; dice tomato 1cm; thinly slice capsicum. Add all ingredients to bowl with dressing and toss to combine. Season to taste.
  6. To serve, cut chicken satay pizza into slices and serve salad on the side.
