Loaded Kumara Wedges with Chipotle Beef

Ingredients
Wedges
- 800g kumara
- 1 cup grated cheese
Beef
- 1 brown onion
- 500g beef mince
- ½ tsp salt
- 25g chipotle sauce
- 2 Tbsp tomato sauce
- 2 Tbsp Mexican spices
- 1 can fire-roasted tomatoes
- 1 Tbsp Worcestershire sauce
Salad
- 2 tomatoes
- ½ bag baby spinach
- ½ red onion
- 1 carrot
- 50g Mexican dressing
To Serve
- 125g sour cream (optional)

Preheat oven to 230°C. Line an oven tray with baking paper. Cut kumara into 1cm wedges; grate cheese.

Toss kumara on prepared tray with a drizzle of oil and season. Roast for 15 minutes, top with cheese and roast a further 5-6 minutes, until tender and crunchy.

While kumara is roasting, finely dice onion. Heat a drizzle of oil in a large fry-pan on high heat and cook beef for about 5 minutes, until browned. Add onion and salt and cook a further 1-2 minutes until softened.

Reduce heat to medium, add chipotle sauce, tomato sauce and Mexican spices and cook until fragrant, about 2 minutes. Add fire-roasted tomatoes and simmer for 6-7 minutes, until thickened. Stir through Worcestershire sauce and season to taste.

While beef cooks, dice tomatoes 2cm; roughly chop spinach; thinly slice red onion; grate carrot. Toss all in a large bowl with Mexican dressing and season to taste.

To serve, pile kumara wedges into bowls and load with chipotle beef and a dollop of sour cream (if using). Serve salad on the side.
